Organic Cuisine
No one does organic like Madison. From the legacy of Aldo Leopold and John Muir to our time tested farmers' markets and restaurants, Madison's green history has written itself for over a hundred years.
This dedication to green and sustainable ways of life is captured in many of the area restaurant's philosophies. L'Etoile Restaurant has been celebrated internationally for owners Chef Tory & Tracy Miller's commitment to working with sustainable agriculture and locally grown, organic produce. Harvest Restaurant owner Tami Lax shares a similar vision by working exclusively with local and organic vendors and her executive Chef, Derek Rowe, utilizes seasonal ingredients in his nationally recognized cuisine. Fresco and Nostrano are two more outstanding dining choices that blend in organic and local ingredients into their world-class fare. Fresco's Chef John Jerabek's local "farm to fork" focus and outstanding Contemporary American cuisine wow their guests while Nostrano employs a philosophy of using fresh, local, seasonal ingredients to create world-inspired dishes, crafted with simple pleasure. Lombardino's is yet another fine restaurant focused on staying green. This Italian style restaurant has built relationships with local farmers and uses only the highest quality organic produce, eggs, and meats and assures that the menu reflects the best seasonal entrees.
For cooking in, Madison also offers many ways to shop green as well. For over 35 years Willy Street Co-op East and Willy Street Co-op West have been Madison's largest consumer-owned natural food stores. Here you can find locally grown and prepared foods and hundreds of fresh produce items daily. The nationally renowned Dane County Farmers' Market is another way to eat green. With two locations and both Saturday and Wednesday events, eating naturally has never been easier.
