We had so much fun with this workshop the first time that we’re doing it again! Maybe you’ve got a thing for craft cocktails and artisanal ingredients and want to learn how to DIY your own infusions at home. Or maybe you’re just looking for a fun custom piece to add to your bar cart or liquor cabinet. Either way – this workshop is for you!
Local mixology expert, Madison Cocktail Week co-organizer, and Plain Spoke Cocktails founder Tom Dufek will kick off the workshop with a discussion about ingredients, infusions, and bringing it all together in a cocktail. He’ll share his extensive knowledge of flavors and mixology while sharing infusion techniques that you can try at home. Rumor has it you might even get to taste a sample of one of his infused liquors!
The next portion of the workshop will be hands-on. A Revel instructor will lead you through the process of etching a custom design onto a 750mL glass decanter. Note: you’ll get to select your custom design from the options below at registration!

About the Instructor: Tom Dufek is a 14-year veteran of the food and beverage industry and currently serves as the Managing Director of Rule No. One Hospitality in Madison, WI, where he is responsible for the beverage programs that have put Lucille and Merchant on the map as drivers of cocktail culture both regionally and nationally. Tom co-founded Madison Cocktail Week in 2014. More recently, he founded the Plain Spoke Cocktail Company in 2018, with the mission of making high quality canned cocktails more convenient and available wherever life takes you, even when you don’t want to go to the bar.
Tom received his Law Degree in 2015 from the University of Wisconsin Madison while managing Merchant. He lives on Madison’s north side with his wife Ryann and their French bulldog, Lady Arwen, First of Her Name. He’s a life long learner, obsessed with reading and Carly Rae Jepsen.
