OVERVIEW
Have you ever wanted to learn how to make delicious dishes from fresh Wisconsin-grown ingredients? Learning how to cook with locally sourced ingredients right from the farms of Wisconsin is a fun and unique experience. You’ll learn how to create savory feasts featuring grains like corn, spelt, rye, and buckwheat that have been harvested nearby. You may be surprised just how delicious cooking with locally-sourced ingredients can be! Every dish is sure to impress and you’ll savor the flavor of freshness in each bite.
We’ll use local grains, grown in Wisconsin to make:
- Mixed grain salad with sweet potatoes, cranberries, kale, and pomegranate vinaigrette
- Spelt & wild mushroom risotto
- Goat cheese polenta with roasted cherry tomatoes
- Shrimp & grits casserole
- Buckwheat, rye, and oatmeal pancakes
Cold beer and wine, in addition to cocktails, are available for purchase from our bar. Come early for cocktails (5:30) — class begins at 6:00!
Our classes are small, so you get personal attention from our professional instructors. Your instructor, Chef Kevin Appleton, has a passion for food, drink and fun. He is a former Culinary Instructor at Madison College. He worked at some of the best fine dining restaurants in Chicago and was Executive Chef at Robert Morris College’s Institute of Culinary Arts.
